Este comportamiento revierte la tendencia de descenso consecutivo en la demanda de carne que ven\u00eda observ\u00e1ndose desde el a\u00f1o 2018. <br><\/p>\n\n\n\n<p>Tendencias por especie: <br><\/p>\n\n\n\n<p>El consumo de carne bovina alcanz\u00f3 46 kg\/hab\/a\u00f1o en 2021, comenzando un proceso de recuperaci\u00f3n con respecto a los a\u00f1os anteriores. <br><\/p>\n\n\n\n<p>La carne aviar, segunda carne m\u00e1s consumida en Uruguay, mantuvo en estos dos \u00faltimos a\u00f1os una trayectoria ascendente, con un crecimiento m\u00e1s pronunciado en 2021 (2.9 kg\/hab\/a\u00f1o). <br><\/p>\n\n\n\n<p>Respecto a la carne porcina, luego de registrarse en el a\u00f1o 2020 una ca\u00edda en el consumo, en el a\u00f1o 2021 se observa un ascenso de 1.0 kg\/hab\/a\u00f1o. <br><\/p>\n\n\n\n<p>En lo que refiere al consumo de carne ovina se produce una nueva retracci\u00f3n. <br><\/p>\n\n\n\n<p>El consumo total de prote\u00ednas proviene mayoritariamente de la faena nacional, con excepci\u00f3n de la carne porcina, que tiene como principal origen la importaci\u00f3n.<br><\/p>\n\n\n\n<p>Considerando el total de carne, proveniente de todas las especies y de ambos or\u00edgenes (nacional e importado), se observa que el principal destino de la carne es el abasto representando en el a\u00f1o 2021 el 82%, mientras el 18% restante se destina a la industria. <br><\/p>\n\n\n\n<p>En materia de precios al p\u00fablico, las variaciones acumuladas a diciembre 2021 en t\u00e9rminos nominales mostraron una tendencia al alza para todas las carnes. Por su parte, el an\u00e1lisis de precios en t\u00e9rminos reales mostr\u00f3 tendencias distintas entre especies. <br><\/p>\n\n\n\n<p>Los precios de las carnes bovina y ovina mostraron tendencia alcista debido a que aumentaron por encima del IPC, en tanto los aumentos de precios de las carnes aviar y porcina fueron inferiores al IPC, produciendo una ca\u00edda en t\u00e9rminos reales.<\/p>\n\n\n\n<p>Salto, 13 de mayo de 2022<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Uruguay es un cliente especial de prote\u00edna c\u00e1rnica con un perfil de consumo concentrado principalmente en la carne bovina.
