Mientras la carne bovina acumula un aumento de 21,5%1, ubic\u00e1ndola por encima del IPC General en el mismo per\u00edodo (8,1%), las carnes porcina y aviar acumulan un crecimiento por debajo de la inflaci\u00f3n (3,7% y 4,2%, respectivamente).<\/p>\n\n\n\n<p>El consumo total de prote\u00ednas por persona parece haber revertido la tendencia a disminuir que se ven\u00eda observando desde hace 3 a\u00f1os. Seg\u00fan estimaciones preliminares el consumo total podr\u00eda cerrar 2021 con un aumento cercano a los 3 kg\/p\/a\u00f1o respecto al observado el a\u00f1o anterior, que lo ubican, incluso, por encima de 2019.
